Mom's Famous "Not The Singer" Meatloaf

by Stephanie Davies

My mother specifies this every time she mentions the recipe. In her 70s, she may be a doddering old lady, but she knows her pop stars. At dinner - every now and then - we get to hear mom say: "Come on, everyone! I've made Meatloaf - not the singer - for dinner!
So here is Mom's famous "Not the Singer" Meatloaf recipe:

1 lb. Ground Beef, completely defrosted 10 saltine crackers Dash of salt Dash of pepper Dash of ground sage Approximately (this woman deals with dashes and dollops) 1/4 cup ketchup 1/2 cup chopped onion small dash of milk

Preheat oven to 350 degrees. Grease a bread loaf pan lightly with shortening/Crisco. In a medium sized mixing bowl, combine all ingredients, and mix extremely well with your (clean) hands. The mixing is the most important part, if you don't mix it well, your meatloaf will have a "chunky" texture. The mixture should end up with a moist doughy consistency (it should hold together and be slightly sticky, but not completely dry or falling apart). If it seems too dry, add a bit more milk, if it seems too wet, add a few more crackers until you get the right consistency.

Spread mixture into greased loaf pan, and set on top rack of oven. Cook at 350 degrees for 30 minutes or until top of loaf is brown and loaf is cooked throughout. Remove from oven, and squirt squiggle lines of ketchup on top for both decoration and flavor. Serves 2-3 people, and would do anything for love but won't do THAT.
